Cajun Style Brisket

Cajun Seasoning
2 teaspoons salt
2 teaspoons garlic powder
2 1/2 teaspoons paprika
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 1/4 teaspoons dried oregano
1 1/4 teaspoons dried thyme
Rub the brisket entirely with cajun seasoning. Wrap in plastic or foil and store in refrigerator overnight.
Smoke the brisket at 225 degrees F until internal temperature reaches 195F. Roughly 1 1/2 hours per pound.
Let set for 30 minutes. Slice against the meat grain.
